Easy Lasagna Recipe

As busy as we all are nowadays, sometimes you really want lasagna but most lasagna recipes are not as easy as this one and it freezes well. 8 ingredients...that's it!

This may seem like it is going to be runny but the uncooked noodles will draw moisture from the sauce and cottage cheese mixture as it bakes.

Here's what you are going to need:

12 lasagna noodles (do not cook)
2 cups of cottage cheese
1 egg, slightly beaten
1 tablespoons dried parsley
2 tablespoons Parmesan cheese
1 cup Mozzarella cheese, shredded
1 1/2 cups Monterrey Jack cheese, shredded
3 - 4 cups of your favorite Spaghetti sauce ( I like to use Prego Three Cheese)

Here's what you need to do:

In a medium bowl, combine the cottage cheese, egg, parsley and Parmesan cheese. Mix well. Set aside.

Grease foil baking pan(s). 1 - 9x13 pan for 8 servings or 2 - 8x8 pans for 4 servings each.

Cover the bottom of the pan with thin layer of sauce.

Next, layer noodles on top of the sauce (no need to cook the noodles, you can just break them to fit the pan).

Spoon another layer of sauce on top of the uncooked noodles.

Now, sprinkle with half of the Mozzarella and half of the Jack cheeses.

Next, add another layer of noodles.

Now, spoon a layer of the cottage cheese mixture on top of the noodles.

Top with another layer of the noodles and the rest of the cheeses.

Add a thick layer of spaghetti sauce on top.

Cover with extra heavy foil. Label and freeze.

To serve: Thaw. Bake covered for 45 to 60 minutes at 375°. Uncover, top with more Mozzarella cheese if desired and bake an additional 5 minutes or until the cheese is melted.
