Saucy Chicken with Herbs for the Freezer



This saucy chicken recipe is an easy freezer recipe that you can put together in a matter of minutes, freeze it, then thaw and bake when ready.



The thing I love most about the recipe...besides the taste...is that you can come home from the grocery store with your chicken, throw everything in the freezer bag and have it in the freezer literally in a matter of minutes and when the time comes you have a wonderfully special meal.


2 1/2 - 3 lbs. chicken pieces, uncooked
1 (10 3/4-ounce) can cream of mushroom soup
1 tsp. grated lemon zest
1 1/2 Tablespoons lemon juice
1/2 tsp. salt
1 tsp. dried basil
1 tsp. dried oregano

Combine all of the ingredients except the chicken in a 1 gallon freezer bag. Seal and squeeze several times until all ingredients are mixed well. Add the chicken pieces. Reseal and lay flat to freeze.

To serve: Thaw. Preheat oven to 350 degrees F.. Empty the contents of the bag into a 13x9x2-inch baking dish, that has been sprayed with nonstick spray. Cover with aluminum foil and bake for 1 hour and 15 minutes. Serve over cooked egg noodles or rice.

Serves 4 to 6 people.
